Ingredients
- Water 1 cup
- Butter 2 1/2 tbsp
- Flour 2 tbsp
- Sugar 1 cup
- Salt pinch
- Eggs 4 pcs
- Fresh cream 200 g
Method
- Add water and butter to a pan, bring to boil.
- Add flour stirring constantly till a soft dough is formed and the mixture leaves the sides of the pan set aside to cool down.
- Add eggs, one at a time mixing well to form a glossy mixture.
- Make puffs on a greased baking tray.
- Bake for 10 mins in a hot oven, then lower heat to medium and bake for another 15 mins or till lightly browned and firm. Set aside to cool.
- Whisk cream and sugar till light and fluffy.
- Remove the tops of the baked puffs and fill with cream. Cover each puff and sprinkle with caster sugar.
Chocolate eclairs
- Proceed as for the dough as for cream puffs, but shape them into éclairs.
- Bake in a flat tray and set aside to cool.
- Make a slit on the sides of the éclairs and fill them with cream.
- Cover the tops with melted chocolate.
- Refrigerate till they are cooled completely.
